we typically keep christmas eve totally casual. we like to order pizza and rent a movie. It is just the four of us, plus my mom. Christmas day I usually cook prime rib or beef tenderloin.

My dream Christmas dinner:

Chana masala
Saag paneer
Dal makhani
Aloo raswala
Paneer tamatari
Chili paneer / chicken
Chicken tikka masala
Beef nihari
Biryani

Followed by a dessert of barfi and kheer

6 - 8 pieces of bread (your choice on type and thickness, you want to cover the bottom of your dish)
6-8 eggs (I use 6 if the bread is thin or 8 if it is thicker)
1 lb pork sausage (mild, regular or hot - your choice)
1 onion, chopped fine (omit if you want or add green pepper)
3 cups of shredded cheddar cheese (you could get by with 2 cups)
1 1/2 cups of milk
1/2 cup of half and half
1 tsp salt
1 tsp pepper
1 tsp dry mustard

Grease a 9 x 13 pan, set aside. Toast the bread. If you like, cut the crusts off of the bread.

Brown the pork sausage, halfway through add the onions and cook both until the pork is done and the onions are translucent. Set aside to cool.

Whisk together the eggs, milk, half and half, salt, pepper, dry mustard.

Place toasted bread in pan, place half of the shredded cheese on top, then layer the sausage and onion mixture on top (make sure it is cooled), then place the remainder of the cheese on top, then give the egg mixture a final whisk and pour over top of the entire pan. Make sure that the egg mixture coats the entire casserole.

Cover well and tightly with plastic wrap. You may want to add some weight on top to make sure all of the egg mixture is completely absorbed. Place in refrigerator overnight.

The next day take out the casserole 30 min prior to baking to allow it to come to room temp. Uncover the casserole. Preheat oven to 350 and bake for 45 min to 1 hour, depending on your oven. Enjoy!
