I have a japanese maple that deer seem to have chewed the bark...Is this repairable, or do I need a new tree?

If the damage doesn't go all the way around the tree, it should be okay.

To stop them you might want to erect a 6 or 8 foot tall dog wire fence around the tree a couple or three feet away from it. That would be around 18 linear ft.
