Although the term 'Kudzu League' gets often bandied about to describe the upper-echelon institutions of higher learning in the South, it occurs to me that if there is a definitive list of these schools, I am not aware of it. I did a search, and while there is plenty of speculation as to which schools make the cut, I could not find 'the last word' on the subject.
This is a stark contrast to the Ivy League schools, whose eight members are very well known to everyone:

Ivy League - Wikipedia, the free encyclopedia

To anyone that wants to offer an opinion on this, here's a reference point:

Screw the Ivy League, Its All about the KUDZU LEAGUE - College Confidential

By the way, I am well aware that 'Ivy League' is an athletic conference in its' truest sense, but I'm approaching it on a figurative level.

I'm very much at odds with this idea of ivy league. Many if not all of those schools have long since been surpassed by superior institutions.

They're all still among the best schools of the nation, they're all private, they're all old, they're all in the same region, and they all participate in one league. How confused could you be?

They could also add the "lakes league"

1) Northwestern
2) Michigan
3) Washington U
4) U of Chicago
5) Wisconsin
6) Purdue
7) Ohio State
8) Depaul

This is the "as good as the original" Midwestern Ivy League

Why not Notre Dame, Miami U., or Marquette?

I've always thought the Division 1 private schools in the South should have their own "southern" Ivy League. I like the name Kudzu League.

Baylor
Duke
Rice
SMU
TCU
Tulane
Vanderbilt
Wake Forest

I would add:
Washington & Lee
William and Mary
UVA
UNC
Emory
Davidson

Other possibilities:
Rhodes
Samford
Stetson
U of the South/Sewanee
Wofford
Elon

Well I'm thinking strictly about football, and the schools you mentioned either aren't Division 1 (BCS division) or aren't private schools.
