My garbage is locked up in the garage - we aren't allowed to have garbage left out and visible from the street. Minimize the amount of time your trash is accessible - don't put it out until the morning of pickup, etc.. You can shred but that won't stop people from TRYING and stealing your garbage and maybe making a mess of it.
The thing I think that gets me the most about this is someone trespassed into my property, was right outside my home. Not that taking it from the curb is any better but the cans are hidden behind vehicles so what else were they rooting through? Did they try any doors to see if they were unlocked? Just very freaked out.

Usually thieves will go through the garbage, not steal the whole thing. My best guess is you have nice thieves, very large raccoons, or a stocker.
Animals would have left stuff ripped open and strewn about. If everything is just*gone*, then someone took it away.
Generally speaking, there are only two types who will take it all away- criminals, or law enforcement/intelligence agencies. Neither one wants to hang around and be discovered while they are picking through it.
If one is sure that there is no useful information that criminals could use, then there is probably nothing to worry about from them. Me, being considerably less trusting, I might consider changing all of my accounts anyway, and I would change all passwords to all of the home computer accounts/networks as well as all on-line accounts.
Law enforcement/intelligence agencies may be more troubling. Though they would typically wait until trash pick-up day to grab it, that may not always be the case, especially if (for some reason) they didn't think they could snatch it from the street without anyone noticing. Even if no one in the household is involved in any illicit activity, there are several reasons why one might be targeted- mistaken address, a bad 'tip', a criminal used your address for something, an internet usage pattern/search triggered one of the monitoring systems that various agencies use, etc. This sort of 'mistake' (often due to bad info or just stupidity) happens more than most people might think. Sometimes people even get killed by mistakes where the [alleged] 'good guys' get the wrong house.

Agree with this ^. You may be under investigation & possibly it is a mixup with a neighbor.

Anybody in your household been audited? Joined the military? Even if it's not somebody who has lived in your house ... say a nephew who joined the military & is in line for a promotion requiring a higher clearance can trigger something like this.
If you were into drugs I'd say watch out; your in for a no-knock style invasion. Possibly the "good" guys with a warrant but possibly not.
If your not into the dope scene then yes; you may have been targeted for identity theft.
It couldn't possibly be that they changed the pickup route and changed the day?
We had that happen....it's a fair reason as opposed to being secretly under investigation .
There is actually two different garbage collectors that service our area, one does come Monday. But they came by long after this was discovered, and I don't think that the garbage collector would come so far onto the property to take the can. I mean I would highly doubt. Especially at dark and the cans are slightly hidden.
Spoke to my neighbor when I got home from work, nothing happened at their house. He mentioned he saw the can at the edge of the driveway when he left for work at 5:30am and thought it was strange.
If you have any prescription meds always take the label off before you throw them out.
My dog has been having health issues, lots of prescriptions for her. Never thought to remove label. Good idea. It's mostly been antibiotics she has been on.
