The field is already fair, no one is stopping anyone from going into the food truck business, which BTW has been around for 50+ years already, it is nothing new, it's only just getting popular. If a restauranteur wants to compete, let him/her branch off and get more business out of operating their own food trucks.

The whole idea of food trucks is convenience, something restaurants cannot provide; most people don't go to "dine" around food trucks, they go to get something to eat, usually for a cheaper price, a short wait and they go back to their office, they are not expecting to be waited on, and all the other overhead associated with restaurants. These are two different business models, good old fashioned American Capatalism. It would be like General Motors wanting to snuff out Harley Davidson to eliminate competition.

I don't believe those who operate those Roach Coaches know the first thing about proper food handling practices. I don't want anyone touching my food without sanitary gloves. That's a weak law but most food handlers practice it. And by the way ( I won't mention any names) handling food with a sanitary glove and then touching the cash register and giving out money with those same gloves on is not legal and disgusting.

This city does not send Health Inspectors to Roach Coaches. This is incentive to be dirty. Do you see a toilet on those trucks? When busy they pee in a cup then get right back to making food. If there is a nearby porta-john, they may use that but have you ever seen one with a sink to wash?

No no man, not me, I don't want them around anywhere.

I notice these Roach Coaches all over the place in strip mall parking lots. Do they ask permission from the land owner or just park there? In these strip malls are restaurants. How would you feel if you paid rent in a strip mall and one of these filthy trucks parked there undercutting your price?

Not so much on the gourmet food truck scene. They are priced on average a bit more than I spend on restaurant meals.

Although I agree with you on everything else you wrote.

Many that I go to get around this by teaming up with bars or coffee shops.

I doubt people are going to drive all the way from different parts of the city just to come downtown to eat at a food truck.

Okay, let's settle this once and for all. Houston is the fattest, most obese city in the entire Universe as you all well know. So, we NEED to eat and walk at the same time. End of story.
