The Texas Renaissance Festival happens in October. It's a very bid deal in Houston and likely to be an order of magnitude better than any sort of Wild West show you can find. Texas Renaissance Festival expands to 9th weekend for 2017 season - Houston Chronicle

Fort Worth would be your best bet for the old west experience (Stock yards and all that). San Antonio is pretty darn "Texan" as well. Austin is a great place for plant eaters and meat eaters alike. Houston is awesome, and very "Texan" in a modern sort of way, lots of Texas flags and Texas pride, but metropolitan and diverse, not wild west gun shows.

The Houston experience is a bit different than the cowboy experience, but you can get a taste of it here.

I am going to suggest you start with an early morning trip to a trip to Brazos Bend State Park (home of many alligators, 20 mins south of Sugar Land, go there early when the deer and alligators are most visible) after that head to George Ranch (20,000 acre working ranch just 15 mins from Brazos Bend State Park, where they have demonstrations of many cowboy activities with their longhorn cattle), and finish your day with with a swim and horseback riding (OK maybe someone stays back and holds the baby) on the beach at Freeport (about 40 mins from Brazos Bend State Park, combining the best of cowboys and beaches)

For dinner; a Caribbean salad and a slice of Key Lime Pie at the cafe on the beach at Surfside in Freeport.

George Ranch

The George Ranch Historical Park's history follows family lines beginning in 1824 and spans more than 100 years. Just 30 miles southwest of downtown Houston, we are located on a 20,000 acre working ranch featuring historic homes, costumed interpreters and livestock. We are a living history partnership of the Fort Bend County Museum Association and The George Foundation.

Late Oct has Texian Marketing days, which would be a great time to visit.

Saturday October 21st- Discover more than 150 years of Texas history with hands-on activities, battle re-enactments, music and entertainment, historic home tours, cowboys, food, artisan vendors and more!

Brazos Bend State Park

Nature has top billing at this park. Be sure to bring your walking shoes, binoculars and camera.
Besides marveling at nature, you can also hike and bike, fish, picnic, geocache, ride your horse, and stay over*night. Reserve one of our picnic pavilions or our dining hall for your next group gathering.
Pay due respect to alligators, which are common in some areas of the park. Read our alligator safety tips before you come.

Brazos Bend State Park

Freeport Beaches

Since 2009, we have been providing couples, families and friends with great entertainment on the beach.
Our horses have touched many people and we are happy to have the privilege to continue making memories
that last forever.
We leave only hoof prints on the beach.

George Ranch. Yes.

Texas Renaissance Festival. Yes. This place is AMAZING. Costumes, games, shows, it can get hot so wear or buy a hat and wear some sunscreen. Take a stroller or you can rent one. They have food to buy. You can watch a blacksmith, watch a mud fight, belly dancing, I think they have camel rides, this long swing, so much to see and do. You can spend all day there and not get done. It's VERY child friendly.

You know if you really want a bit of history in Houston go visit San Jacinto Monument. And the Battleship Texas.
You'll be glad you did. Texas history is so rich.

Take a day trip or a field trip to the San Jacinto Monument

I third George Ranch. It's got buildings from several different time periods, costumed staff, cattle and blacksmithing demonstrations, and plenty of horses, cattle, some pigs and often times snakes and gators.
