You can go to Bandera--cowboy capital of the world--but that's a 3.5 hour drive...
If you're considering La Grange, you might as well go to San Antonio ... Wimberly is fantastic too and has a 'western/Texas' vibe

I always get such a laugh when people from out of state are fixed on stereotypes. There's nothing "western" about the Houston area, and if they're looking for the kinds of towns they see in TV westerns, they need to just keep watching TV. Otherwise, they'll be disappointed.

Regarding the Fort Worth stockyards, that's a touristy place where stereotypes are presented to thrill those seeking the stereotypes. But it's fun.

There's the town of Cut and Shoot, Texas, about 7 miles east of Conroe, population about 1500 I am guessing. It doesn't look necessarily "western", but the name sounds like it could be a town in the west. The old west. The wild west. Outlaws all around. I heard it's a rough town. I heard they sell brass knucks in the cigarette machines and they close the bar on Sundays just so they can pump the blood out of the basement.

I don't think Texas "feels" Western until you get a little bit West of Austin, the Balcones Escarpment, in the Hill Country.

Lampasas, west of Waco, feels Western. Corscicana, east of Waco feels Southern.

Marble Falls and Llano, northwest of Austin, feels more Western. Bastrop and Lochhart, southeast of Austin, feels more Southern.

Pretty much any city located east of Interstate 35 feels like the South. The further east of Interstate 45 you get, the more it feels like the Deep South.
