I have a guest coming into town who wants to eat BBQ ribs. He asked to find a place that has St. Louis style ribs. I thought this was a sauce or rub, but it seems to be a specific cut of ribs. Seems a lot of places have baby back cuts, any recommendations where to get the STL cut in Houston. I saw the similar thread but Ive found not all places have this cut. I'm in downtown area.

Your in Texas not St Louis... most Texans frown on other States BBQ and claim ours as best. I dont think you'll find St Louis BBQ in Texas

Ok, Apparently Rudy's claims it has St. Louis Style ribs. I think the cut is St. Louis, but I always thought the taste was all Texas.

Baker's Ribs on Voss has them. But call first to make sure I'm remembering right.

Yes, St. Louis is the cut. Usually, places either use St Louis style or Baby Back style

Believe it or not of all places I have found that Whole Foods both here in Dallas and in Austin prepare and smoke St. Louis style ribs and they are outstanding! I would try the one on Kirby to see if they are smoking and selling them...you will not be disappointed!

I'm sure he would rather eat out but pick some up and try them out. They are soooooo delicious!

I would just call your favorite BBQ joint and ask them what style Ribs they use. Try Hickory Hollow in the Heights, for example.


I found this on Stubbs.com:

Q. What are St. Louis style ribs?
A. These are pork ribs cut from the underbelly of the pig. St. Louis style means that the back flap, breastbone and lower ribs have been cut off to create a “squared-up” rack. The breastbone is connected to the top few ribs and runs north and south while the ribs run east and west. Removing it makes carving at the table much easier. St. Louis Pork Ribs have a great flavor, and tend to be a bit larger than Baby Backs.

Q. Okay... so then what are Baby Back Ribs?
A. Baby Back Ribs are a narrow slab that are cut from the loin. Smaller than St. Louis style ribs, Baby Back Ribs take less time to smoke because of their size. We peel off the membrane to allow more smoke flavor to penetrate the meat. This leaves you with a tender, meaty, smokey slab of ribs that, we hope, is the best you've ever had.
