I agree. I have several hickory trees and use chips from it for grilling. I bought some "hickory" while on vacation in SC and the taste was nothing like grilling at home.

How long does it take for the fresh hickory to dry out after you harvest it from the earth?

And there are many types of Hickory. I prefer to use Shaggy Bark Hickory for smoking.
Be sure you can see the bark when cutting or buying.

I have no idear what mine is. It may be scooby bark?

Smoked some cornish game hens on my gas grill. Brined them overnight and smoked them for 2.5 hours. Turned out real tasty. I did hickory last time but did apple wood this time. Think I like it better.

I like apple wood and peach wood for flavor and oak for the heat source.

I did this on my gas grill.

I had enough wood chips left over I smoked some pork chops the next day.

I have used crabapple and could not tell the difference from apple. Just a thought for the budget conscious.

Thanks for the tip, Bob. I am going out to look for some smoking chips today. crabapple is one of the few trees I can identify.
