To the OP, I'm ignorant on what exactly constitutes a proper Jewish head covering but I do know that when viewing old pictures of the Jewish quarters of Tripoli, Djerba, Tunis and other Arab cities, that the Jews wore Kufi's while attending prayers. Whether or not that is in accordance with current Jewish law, I am not sure.
As i already said there is no proper head covering for a man in Halacha/Jewish law so long as man does not go pass [i]Daled amot - four cubits or more Gilu' Rosh ( head uncover). Then he can wear any form of head covering also when in times of prayer. So Kufi's as far as jewish law is concerned are fine to wear.
Its my understanding there's nothing saying what it has to be but that you just need one.
I was actually waiting for someone to type this as there is nothing in the Torah that directly states a male, who is not a priest, must cover their head. It's a Talmudic interpretation in order to do so.
