Freshstart; Try Scott Strawberry and Tomato Farm in Unicoi TN. I will send you a telephone number as a private message. This is one of the largest commercial farming operations in the area and it is near Johnson City.

You might also want to keep an eye on the local newspaper, I have seen ads now and again for farm help with housing in some of them. Question, when you say "low cost rental" give us a dollar figure as that is a relative. You can find 3 bedroom house for around $600 fairly easy here.

Most on-site managed apartment complexes offer less than a year leases. You usually pay more for rent though, presumably because it costs them more due to having to get the place ready for the next tenant when they turn over a lot. I would imagine tourist towns and college towns probably do more of these type of rentals but all of the apartment complexes around where I live in Maryland offer a less than a year (3, 6 and 9 month) lease.
