Here is a place which i looked at just SouthWest of Johnson City. It is definitely 'horsey' country:

Wasn't my cup of tea...the horse part...but that is definitely what they are into in this community. There are power lines overhead, which was also a turn off for me.
On the good side, it is beautiful country, and the Mountains are RIGHT there. Looks to me like good ground.
Bring your checkbook....but it wasn't as bad as i thought it might have been. Check the local listings..there might be one place closer to the Mountains just down the road from Sea Biscuit which is being sold sperately....listing made it look like a great piece of property.

Some hefty prices on that site - but beautiful looking, too for the horse set..
Currently I'm helping friends of my son's, a young couple with 3 kids look for precisely what rktorrington described - possibly a little more land. We have tried to steer them in the direction of Greene County and the Rogersville area because that seems to be where you can still find a combination of pasture and woods without breaking the bank -- and being *too* far removed from civilization.. They'd found some things in Sneedville, but even though they home-school we noted this is a very isolated area - although there are some super deals. I've scoured tons of sites from realtor.com to trulia.com and Homes and Land among others. Now if you can cross over into Virginia, there are some good prices there, too - close to the state borders in more remote areas there are deals. But seems the closer you get to Knoxville, prices climb. If you want to be nearer the Tri-Cities, then the Limestone area (in Washington Cnty) has some gorgeous pasture parcels; 10 acres w/ creeks - and maybe a barn for around $100K. I saw several of those. But beware of some of the smaller, outlying communities where beautiful land may exist but the population may not be too welcoming. *This* I discovered from folks posting on our own TN City Data forum (when I was checking out one little town). CD commentary on different communities is really an excellent way to avoid falling in love with a property - then making a big mistake.

But this is just the NE TN area.. Don't know what's available in other parts of the state - but also, then you might not get those great mountain views!

Default try...

Greeneville TN
Fall Branch TN
Jonesborough TN

There are some nice places left in Gray TN, too. I love the area near Douglas Shed road and out that way. My daughter takes horsemanship lessons out through there. Pretty.
