I can't remember how much banquet waiters make specifically (I had access to that a few years ago in my job but no longer), but it's not a bad living. However, you would have to belong to the Culinary Union and be on one of the "On Call" lists. The 'A' list is called first, then the 'B', etc. It takes time to work up to the 'A' list. But we have in the neighborhood of 4,000 conventions and trade shows, plus all kinds of other big gatherings per year. That includes slot tournaments at individual hotels, weddings, wakes, bar mitzvahs, family reunions, company Christmas parties, etc. And that means thousands of banquets. We have the largest convention center in the country and that's just one of our convention facilities.
I've known people who were on both the banquet call list and the convention set up/tear down lists. They were seldom out of work. There are thousands of people on call in Las Vegas, and there are always a few weeks a year that many of them collect unemployment or partial unemployment. It's kind of a ritual every Friday in Nevada if a banquet worker hasn't been called for enough jobs that week to get on the phone for his/her unemployment.
Some banquet workers may also work exclusively at one hotel. I doubt there is a day that goes by that there aren't banquets all over town.
I don't know about the bouncer thing because mo'lady won't let me go to strip clubs. I know I wouldn't want to have anything to do with that business. There are lots of low lifes like Adam Pacman Jones out there and the pay isn't good enough to be taking bullets for.
