They're OK, but just barely. They may be the best outside of my home state. Their chili leaves a lot to be desired but is better than no chili. I never eat anything but what you all call chili dogs. Where I come from we call them hotdogs. Made any other way is blasphemy. We do give you the choice of onions or no onions. Depends on who you're with when you eat them.

Forget Chicago dogs. Authentic West (by god) Virginia Hot Dog Chili (Crockpot Version), by Buzz rev 5/28/08

(This is even better than original with my new changes and cooking in Crockpot for 5½ hrs. So if you liked the original, you’ll love this one. You can still cook it in a heavy kettle if you don’t want to use a Crockpot.)

¼ lb. lard (you can also use Crisco)
2 large onions (chopped)
5 lb. lean ground beef
4½ oz. hot chili powder
¼ tsp. allspice (or cinnamon substitute. I used a little of both.)
6 to 8 garlic cloves (chopped) (if you buy chopped garlic in a jar, ½ tsp=1 clove)
4 tsp. Paprika
2½ C. water
½ C. cracker meal
3 tsp. salt

In a heavy kettle (5 or 6 qt.) fry lard, onion & garlic until tender.
(Flatlanders refer to this as sauté.)
Add chili powder.
Fry (sauté) 3 minutes & stir.
Add water & cook 3 more minutes.
Remove from heat.

Add meat & mix until no lumps. Add allspice, paprika & salt.
(At this point I put everything in Crockpot, mixed with bare hands, cooked on high for 1 hour, then stirred and cooked on low heat for 4½ hrs.)

(Skip next two steps if using Crockpot)
Put back on fire and stir for 10 minutes.
Simmer for ½ hour.

Take off heat & stir in cracker meal.
Let cool and pour into 9 x 13 (or so) dish.
Place in refrigerator over night, cut into approx. 3 inch squares, then you
can wrap in foil and freeze. (It’s better aged to perfection.)

When heating frozen squares add a little water.

For authentic Clarksburg (little Italy) WV hot-dogs, add mustard to
steam heated bun (I prefer potato bread buns), place weenie on bun, add enough chili to cover weenie, and sprinkle with chopped onions.

If you add Cole slaw like them Southern West Virginia hillbillies do, don’t let me find out you ruined my chili or I’ll revoke your cooking permit.
Also, please use all beef weenies, not road kill, or critter du jour.
