I've shopped at John Mull's Meats a few times; a good solid butcher, liked all the stuff I got there yet a little pricey on most stuff.

Let me offer a couple options you might not anticipate ...

For chicken, my go-to places are the Mexican markets, especially El Super. Their chicken is consistently fresher & more flavorful than far more expensive stuff from, say, Albertsons. An added bonus is it's a lot cheaper - great value. Today, for example, they had a one-day sale where their chicken leg quarters were 49 cents/lb. Watch their ads, they do this once in a while.

As for general stuff, Costco has great meats. They won't have the variety you might find at a mom-and-pop butcher shop; what they DO have is consistently high quality. Occasionally they'll have top quality prime cuts of beef hard to find anywhere else. A couple months ago they had a temporary markdown on their 90% lean/10% fat ground beef for $2.09/lb in a 10 pound chub (at their business center store on MLK). I bought one & broke it down into 2 pound sections; it's probably the best ground beef I've found in 15-20 years - very consistent meat with a deep red hue. I also bought 15 dozen medium eggs for $3.89 on the same trip (26 cents/dozen) - I go through a lot of eggs! (Usually I buy large or jumbo eggs but it was hard to pass up smaller eggs at only 26 cents/dozen. Now I use 4 eggs instead of 3 in an omelet. I can live with that.)

Don't overlook Costco for your essential meats - then head to a mom-and-pop butcher for the specialty items & hard to find stuff.

With that said, I have a couple questions. Has anyone found a place for good Boudin or Andouille sausage in this town? What about Haggis?

So, lots of bbq snobs here, but not a single recommendation from them!! Come on snobs, where's good for bbq in Vegas?? Rolling smoke?

My smoker does not discriminate. Great BBQ (to me) is all about taking what is normally a cheap, nasty, tough, grisly, fatty, virtually inedible piece of meat and cooking it indirectly between 225-235 degrees in some cases over the course of 24 hours or more and turning it into a juicy, tender, flavorful masterpiece.

So for me, the meat for #1 comes from where ever I can find meat on sale.

what kind of smoker do you have?

i've never smoked a brisket that i was happy with

I have a Weber Gas Grill that I use for steaks and things that I either cold smoke first or cook Sous Vide and then just want to flash to get a nice crust on.

I have a 40" Masterbuilt Electric Smoker that I rarely use any more. It is just a backup in case I run out of pellets or some other tragedy strikes my go to.

My go to is a Rec Tec 680 pellet smoker.
