Well, there is a conservative synagogue in Lexington called Ohavay Zion and a Reform Temple called Adeth Israel. There is a Hillel chapter at UK, also. The local federation office in Lexington can send you an information packet. Their phone number is 859-268-0772. The Federation has a Young Bluegrass Jews group that meets every month or so for activities and tzedakah. They also have a free Jewish community newspaper with all the events and activities in the whole community. That should get you started.
