We are renting a vacation home in New Castle for the week of 7/4.Does anybody have recommendations for things to do, places to eat, or swimming holes for the kids?

Pemaquid. Pemaquid Lighthouse. Pemaquid Beach. Fort William Henry is very interesting and on the way to the beach. I know I'm biased but it is my opinion that Pemaquid is one of the most beautiful spots in the State. It is NOT commercial, there is no McDonalds or Pizza Hut.

There are lots of cute little harbors in that part of the coast. There is also the town of Damariscotta which is charming; Wiscasset is just a short drive away and has lots of antique shops; Boothbay Harbor is also a reasonable drive and is very scenic, cute shops and restaurants. You could also take a boat tour out of Boothbay Harbor, they have short 90 minute tours and others that last most of the day.

Swimming hole: Damariscotta Mills, at the foot of Damariscotta Lake. DM is actually part of Newcastle. It's a true "swimmin' hole," no lifeguard, grassy "beach," no parking to speak of. Damariscotta Lake State Park in Jefferson at the other end of the lake has more amenities. If you're looking for the classic ocean sand beach experience, Pemaquid Beach is close, but Reid State Park in Georgetown or Popham Beach in Phippsburg are bigger. I prefer Popham myself, not least because I'm a fan of Spinney's Restaurant over by the fort.

it's Newcastle (all one word).....

Ditto on Damariscotta Mills or the state park beach (top of the lake in Jefferson) for swimming. Pemaquid is definitely one of the best spots in Maine, and Popham Beach is lovely.

You'll be only about 12 miles from New Harbor, and Hardy Boats (hardyboats.com) runs ferrys to Monhegan Island for the day, and puffin and seal watch cruises all summer long. New Harbor is a working harbor, and you can watch all the lobster boats coming and going while you dine on the deck at Shaw's Lobster Pound - it's quintessential Maine . You'll also have an easy drive to the cute coastal towns of Camden and Rockport - many of the big windjammer ships are based in Camden, and though most may be out for a half or full week at a time, there may be a couple smaller boats that do day sail trips, too.
