I can't suggest any Chinese places since I haven't dined at any downtown.
As for Italian, well MplsTodd is right on about pizza...if you want a fantastic meal visit
Punch Neapolitan Pizza ...absolutely DELICIOUS!!!
I will also recommend
Bellanotte Minneapolis located across from the Target Center and D'Amico Cucina
D'Amico and Partners in Butler Square.
I can think of some more Italian restaurants worth visiting, but they're not downtown...

Nicollet Mall only extends south to, I believe, 14th street. After that, it becomes Nicollet Avenue. If you're looking for Chinese, I would say the best stretch would be from 25th to about 29th and Nicollet: Evergreen, Caravelle, Rainbow Chinese, etc. There are also restaurants such as Azia (asian fusion), Singapore, various Vietnamese shops, etc.
Most of these restaurants are pretty hole-in-the-wall. Rainbow Chinese is probably the closest to 'upscale'.
You'll also see a lot of Mexican restaurants in that neck of the woods, hence it's moniker of "Eat Street".
