Hmmmm, I don't think you can hit all these things in a week.

I'll assume you are staying somewhere nice since you'll need a lot of $$$$'s for all those activities - get to know the concierge at your hotel very well.
Jet Skiing isn't very common in Oahu - there are only a couple of places that do it. That said, I know some people that have done this:

Luau - In Waikiki, the Royal Hawaiian, don't do the Hilton, it is on top of a parking lot. Or book the Polynesian Cultural Center.
Polynesian Cuisine - people flock to Alan Wong's and Roy's - dozens of options. Depends on where you are staying, budget, etc.....
Snorkling - Hanauma Bay
Horseback Riding - Hmmm, I'm sure you'll need to head to the North Shore for that
Play with Dolphins - Again, not common - head to the North Shore on a Shark Tour, best I've ever done - they start early then you can do your horseback riding and general site seeing.
Dinner on a yacht - have the hotel concierge set you up.
