Hello, I am planning retirement. Living in east coast now, want to move to Oregon. I am a guy who love natures. Ideal place is small, quite town surrounded by forests, waters and mountains, for hiking, fishing, kayaking…. A small house with several acres lands for gardening vegetables and animal pets.
Please suggest where should I be looking for.

Towns in the Willamette Valley are good locations for gardens. You need to pay attention to sunlight, a site surrounded by tall trees is likely to be very shaded and not good for gardening (and many tree roots put out a chemical to prevent the establishment plants other than very shallow roots). The other features you desire are close by but "waters" may be an issue this year because of lack of snow pack.

If you find a home on a well be sure to verify water rights if your garden is more than a small one for domestic use.

Thanks, Nell. I am not serious for gardening, may be a tomato for dinner. Just love plants, and want to live in the area with lots of woods, close to rivers, lakes, mountains, lots of out door activities. Tired living in big city in the east, just want spend rest of life in rural.

Look at Central Oregon. For small town LaPine comes to mind, if you don't mind some winter snow.

Plenty of trees and outdoor pursuits, but without some perseverance gardening will be a challenge, short growing season.

Silverton would meet most if not all of your criteria. It is in the foothills of the Cascades so lots of mountains and trails all around but still close to Salem for shopping.

What is your budget? If you can afford $500k you are in pretty good shape in the Willamette Valley or inland a short distance on the coast. If that's too much, you may have to give up something on your wish list.
