We've done the Disney nice restaurants and enjoy some of them. We are looking for other nice restaurants to try at our next visit. I've heard good things about Norman's at the Ritz Carlton. How about the Captain's Grille? We really don't want to venture east of Orlando such as Winter Park, would rather stay I4/International Drive/Sand Lake area. We know there are quite a few to choose from, we just don't know their reputations. Type of cuisine doesn't matter, as long as it is of good quality and served with attention.
Any suggestions?

There's definitely a ton of great restaurants to choose from. It really does depend on more on your tastes. Restaurant Row is full of upscale restaurants with good reputations. Seasons 52 is probably the most beloved of the restaurants over there. It is beautiful, the food is great as is the ambiance. If you want even fancier, Morton's and Christini's both have solid reputations as great restaurants. But really, it's hard to go wrong in the area when it comes to food.

Waldorf Astoria® Orlando : Dining and Entertainment - Fine dining, Luxury Resort

Way closer to Disney than the Ritz and more exclusive too. Brand new though so I haven't eaten there yet but all of the reviews have been very positive.
