Recipe of the Day:

Avocado Veggie Panini



from Avocado Veggie Panini - Pinch of Yum

This avocado veggie panini is stuffed with lots of sauteed mushrooms, tomatoes, and kale, and smeared with avocado. So yummy!
1 1/2 tablespoons butter or olive oil
1 minced shallot (onion or garlic works too)
8 ounces sliced baby portobello mushrooms
1 cup cherry or grape tomatoes
2 cups chopped kale, stems removed
salt to taste
2 avocados
8 pieces thick, sturdy wheat bread
melty white cheese like Provolone or Mozzarella, if you want

Heat the butter in a large skillet over medium high heat. Add the shallots; saute until translucent. Add the mushrooms and saute until browned lightly on the outside. Add the tomatoes and kale; saute until wilted and warmed through. Remove from heat and season with salt.
Mash the avocado in a bowl with a fork. Spread some avocado on the surface of each piece of bread. Assemble the sandwiches by carefully arranging the vegetables on the bread. Get as many veggies on as you can because the sandwiches sink down when you use the panini press.
Add the cheese on top of the veggies if you want, cover with another slice of bread, and place on a preheated panini press. When the bread is browned on the outside, remove from heat. If you did not cut the tomatoes, be careful as they might burst when you bite into them and they will be hot!

When did you first get a computer? - 1999, but started using one in 1995 or 1996.

How about the Internet? - 1996

Did you ever have your milk delivered in glass jars? - I seem to remember that when I was a child.

Do you like to bowl? - Yes!

Have you ever been on a bowling league? Would you? - Not now. But I played in a couple of leagues when I was a kid.

Ooh garage sales....yay or nay? - Never been and no interest.

Have you ever had one? - Nope

Have you ever been to a flea market? - Haven't


Extra Credit Questions:

Which one...BBQ/Picnic time: - I don't do either but I guess picnic

Corn on the cob with or without butter? - I can't digest corn. Must avoid.

Macaroni salad or potato salad? - Potato

Ribs or chicken? - Chicken

Hamburger or hot dog? - Neither

Apple pie or watermelon? - Apple pie

Lemonade or iced tea? - Lemonade but I'd rather just have fresh lemon in water.

Frisbee or softball? - Softball. I played in leagues when I was younger. Last time was when I was 31. I wouldn't mind at least throwing the ball around again and maybe more...

They're fun. You never know what you'll find. But I'm at the stage of life when I'm trying to get rid of stuff, not accumulate more. And it's easier to find those odd items on eBay.

Probably not.

Junk go into a trash, other things are sold on ebay. No garage sale.

Today’s Questions:
When did you first get a computer? Having only used a school district computer, I will need to buy one within the next year since I'll be retiring. So, if you're asking about the first one bought, I haven't yet.

How about the Internet? Oh, years ago. I don't remember.

Did you ever have your milk delivered in glass jars? I grew up on a dairy farm and my dad delivered milk in glass bottles. I have an old milk cooler that sat outside people's homes, a milk carrier that holds eight bottles and quite a few bottles. The carrier with the bottles looks pretty filled with wildflowers.

Do you like to bowl? Not especially

Have you ever been on a bowling league? Would you? My mother was in a bowling league and she signed us all up to be in the kids' league.

Ooh garage sales....yay or nay? Rarely stop. I'm trying to get rid of things now.

Have you ever had one? Haven't.

Have you ever been to a flea market? Have. One of my sisters used to have a booth.

2 cups chopped kale, stems removed
salt to taste
2 avocados
8 pieces thick, sturdy wheat bread
melty white cheese like Provolone or Mozzarella, if you want

Heat the butter in a large skillet over medium high heat. Add the shallots; saute until translucent. Add the mushrooms and saute until browned lightly on the outside. Add the tomatoes and kale; saute until wilted and warmed through. Remove from heat and season with salt.
Mash the avocado in a bowl with a fork. Spread some avocado on the surface of each piece of bread. Assemble the sandwiches by carefully arranging the vegetables on the bread. Get as many veggies on as you can because the sandwiches sink down when you use the panini press.
Add the cheese on top of the veggies if you want, cover with another slice of bread, and place on a preheated panini press. When the bread is browned on the outside, remove from heat. If you did not cut the tomatoes, be careful as they might burst when you bite into them and they will be hot!

I used to go to flea markets all the time. 😊
