I'm looking to have some aftermarket exhaust components installed on my track car - any recommendations on a mechanic out near Chandler that can do this at an affordable price?

If you have your own parts, any muffler shop (ie: Midas, etc.) should be able to do it.

Well, if they need the business, perhaps. In my experience, shops won't do this except for established customers (I had to get a junkyard AC compressor for my old LTD years ago, as the part was no longer being made, and I didn't want to pay for a retrofit-- my mechanic agreed to do the install and the freon charge, with no warranty on the part, because I was a long time customer.)

Yup, very good point. Most chain-type repair shops will not let you bring in your own parts, since they usually have a markup on the parts they they are already buying in bulk, as well.

In fact, the only place I was able to get my own muffler installed was at Midas (on Arizona Ave). They only carried Flowmasters, but I bought my own Magnaflow online and they only charged for the labor.

But I had to find an independent mechanic when I wanted my brakes & rotors changed with my own higher quality parts. None of the local brake shops would do labor only.
