The reason the animals are not extinct is because people pay to hunt them which supports the game preservations. It is a symbiotic system that brings in foreign dollars to maintain heard size, often culling older non producing males that still control herds of females reducing population growth. Plus the money funds the law enforcement to track and catch the criminals. Big game hunting has monotized an asset and made them worth protecting.

If rich people didn't hunt many species would become extinct by poachers. Non desirable species would over produce and then die from starvation as the natural population check was removed via the poachers.

Think of it this way, if humans didn't eat cow, chickens, and pigs by the millions cows, chickens and pigs would cease to exist as their would be no need to bread them and they would have no ability to actually servive in the wild. People eating meat means ensures that millions of creatures are born that never would have.
