Ladies and gentlemen addresses adults only and excludes children. It seems more logical to say everyone as children do travel by plane.

I mean, it's such an important issue, after all, because somebody somewhere might get offended after a couple hundred years of people (including children) referred to as "Ladies and Gentlemen" and everybody knowing it was simply a greeting, not a description that has to be 100.000000% correct or else somehow "bad" things will happen in some way, and...
