Here's my advice if you wind up in an encounter with law enforcement.
Do what you are told.
Sign the ticket.
Don't pick a fight with the police.
Be polite.
When it is all over, you can march right to the police station and file a complaint if you felt mistreated during your encounter.

If they arrest you, there is no ticket to sign, otherwise, as you say, stay cool.
