Are there Ultimate Frisbee clubs in the Chapel Hill/Raleigh area? This would be for adults, not college kids specifically. I'm middle aged and I don't want to play with a bunch of youngsters.

TFDA is definitely the place to check. They are very much on top of listing all the local pickup/meetup games. If you're "middle aged" and skilled, there are masters and grand master club teams in the area. If you're just looking for some friendly pickup, I'd suggest (in order of 'competitiveness'; most to least) Forest Hills, Cary Lunchtime and Zen games. There's a good mix of folks at each. I'm not as familiar with the other pickup games but have heard nothing but good things about all of them.

I am not skilled I am ok. Not looking for anything competitive, I just love to play and get out, meet people and burn a few calories.
