I am going to be in Wilson, NC for a 1 night stop over on the way to Myrtle Beach, SC and would love to have good BBQ while there. Did some research and it looks like Bill Ellis or Parker would be my best options. Which do you prefer and did I miss any that are better.

Bill's is great! It's easily my favorite eastern NC BBQ restaurant.

Parker's has the Corn Sticks

If it were me, I'd drive (out of my way) to hit B's in Greenville. Just get there early, they run out. If I didn't want to run out of my way, I'd head down toward Wilbur's in Goldsboro.

Parkers. Good bbq, but the best brunswick stew I have ever eaten.

Parkers and Bill's have a different feel to them from each other. Parker's is a sit down and be served kind of place, Bill's is a buffet where you can not help but eat too much.

Both are usually full, I prefer Bill's and they have some of the best fried chicken anywhere. They also usually have a "whole hog" out that you can select from if you prefer non minced pork. They also have vegetables

I agree with your choices. The two places the OP mentioned are just average, IMO. The Skylight Inn in Ayden or Stephenson's in McGee's crossroads are also very good and not too far off I95.
