All of the salaries for state employees are public knowledge. I know that at NC State, all of the salaries for the year are held in the library (at least they used to held there) and you can go and and look up the department, and the rankings and see the various salaries.
I am sure there is probably a way to see them online now, but I haven't needed to know in a while. My guess, with salaries, many times it will depend on the department (each department will have a different budget).
It should be relatively easy to find out since they are public domain.

State employee salaries are public information and available online:
triangle.com | Know
There are multiple assistant professors with salaries in excess of $130k, most of them in the College of Management.

...and if you're an assistant professor in the english department, I'll bet you're making less.
Seriously, though, you can't make any sweeping conclusions about salary based on a title of "Assistant Professor." If you're an assistant professor in something like classics, you're going to make far less than an assistant professor in, say, the school of medicine. (Yes, I know NCSU doesn't have a medical school, but that's the most diametrically opposed in pay that I could think of.)

Most asst profs in the UNC system are going to be making 60-80K starting out (depending on discipline), and 80-100K after 6 years as they come up for their tenure decision. There will be the odd superstar who's higher than this.

Can't speak specifically for NCSU, but at many places, if you're a hot shot in the business school, it's possible. But, the large majority of asst profs in other departments are rarely anywhere near that.

I checked the salary of a couple of professors at the UNC Business School. One is an assistant professor, and he's getting $230K. The other is a full professor, and his pay is $263K.

I am, clearly in the wrong profession I wonder what the Duke Business School ( MBA) professors make. Probably 300K.
