I just moved to the area (Carrboro) with two large dogs that love daily 3-mile+ hikes. I've stumbled across a few hiking trails already but have yet to find a map or list of various trails around this area. I'm particularly interested in nature trails where dogs and biking are permitted - A dog park nearby, even better. Any ideas or recommendations? Does such a map exist?

The trails behind Chapel Hill High School are great. There are many entry points, including from Herman Wilson Park in Carrboro, off of Estes as you leave Carrboro right before the railroad tracks, and from the parking lot of Seawell Elementary and the parking lot of Chapel Hill High School (walk down the gravel road between the athletic fields. I don't know of a map, but Bolin creek runs down one side of them, and the train tracks are on the other, so it is pretty tough to get lost. I typically ride 12 miles on them, and don't hit every trail, so there's plenty in there to explore before you get bored.

I had the same question in Cary as I was wandering across a lot of non publicized greenway. So I added all the ones I found to open street map after jogging them with my GPS. The Cary trails are mapped quite well now... you can see the results:

A similar picture for CH shows a bit less trails mapped, only three I can see - two blue and one red:
