I just ate a delicious meal made with some leftover food

I mixed 40% - 50% chili with meat with plain rice, also added some green peas, a few garbonzo beans, then topped it off with some fried onions, some black pepper, and a little hot sauce.

kind of tasted like a Spanish rice caserol

Sounds good! I use my leftover homemade chili to make a chili- veggi soup, adding chunks of potatoes, peas, chopped cabbage, corn, celery, and any other vegetable that I have on hand. I add alittle tomato paste mixed with water and chili spices, to thin it all out into a soup. It's really good in the winter time, with corn muffins.

I love having leftover chili. I always prepare extra but it doesn't always make it past the 1st day. My favorite things to do with leftover chili:

Top boiled macaroni, rice, and other pastas
On a loaded potato with cheese and sour cream
Chili cheese dogs
Chili burgers
Nachos and chili pie
Taco salad
Burritos and tacos

Some of my best meals start out as leftovers.

Last week I turned seasoned slabs of cooked chuck steak originally made for shredded beef taco filling into chili colorado.

I chunked them up in a pot, added a little water and their remaining sauce, some mexican oregano, and a couple tablespoons of tomato paste. I also added 2 zucchini & one small onion that I'd finally minced in the food processor because I have to hide the veggies to get DH to eat very many of them. This made a wonderful chili colorado that we ate in flour tortillas topped with a dollop of sour cream. The meat had been well rubbed in chili powder, salt, and garlic when it was cooked the first time so it had a lot of flavor already. This second cooking continued to tenderize it and it was fall apart delicious - actually better than the first go around. The next day I added some of my leftover pinto beans and we had beef and bean burritos.

I have some bones from my ham steaks. I know there's a dish that they use them for--and that's why I saved them. I think it has to do with beans.

Is it baked beans? Bean soup? Something else?

My family always made a version of U.S. Senate Bean Soup with a ham bone but it was usually a larger bone than the kind that come in ham steaks. Ham bones are also used in red beans 'n rice.

These days I use 1/4-1/2 cup of Bacos chips as a pretty good substitute.
