My Brother brought me this Hogzilla ham-bone today with lots of meat...
It's smoked (City) ham but not spiral and glazed....

So besides the usual Soups-- Pea, bean, potato and Scalloped potatos..
Anyone have some different, new ideas for me?

Yellow split pea. Quite different from green pea. Be sure to use lots of carrots.

Hogzilla bone, chopped onions and carrots (lots), bay leaves (3), chicken broth water 50-50, 1 pound split yellow peas. Ground black pepper. Crock pot for 8 hours.

I've got one coming due soon too, so I hope there will be some good ideas.

Probably split pea ...... I might have some butter or lima beans around.

Could simmer overnight and make stock. Reduce and make a white sauce.

We used barley, potatoes, carrots, and celery in our ham stock. I precooked the barley separately, though, since it really sucks up the liquid. Turned out yummy.

you can make collard Greens using ham bones too. Gives the collards great flavor.

Hoppin John - boil the ham bone with two onions till everything is soft and the meat falls off the bone. Cook black-eyed peas as package directs, drain, simmer with bone and onion for an hour. Remove bone. Cook 2 cups rice until just tender; mix in with peas and onions, add garlic, salt, and pepper to taste, even a dash or two of hot sauce if you like it.

PS lubby, we use lard and/or fatback in collards... that salty bacony flavor!
