I noticed the seltzer in the recipe. I can't think of any reason to use it other than to add a trace of carbonic acid. Do you have any information or insights on this? Is seltzer used in any other recipes that you know? This is a new one to me.

My best guess is that the seltzer provides some carbon dioxide bubbles that will expand as they cook thereby providing some aeration to the dough.

Yum..I haven't had matzo ball soup in years. It looks pretty easy to make

In my family it was always known as chicken soup with matzoh balls.

Because butter is dairy and observant Jews do not mix meat and dairy. The soup base is chicken, hence you already have the meat. Adding dairy to it is a no-no.
