3 heads of romaine lettuce halved lengthwise stems attached
2 cups of grape tomatoes cut in half
1 cup crumbled feta
1 tbsp olive oil
2 tbsp balsamic vinegar
pinch of salt and pepper
Pre-heat cast iron grill pan or outdoor grill. Grill romaine lettuce until it just starts to wilt and gets a slight char on both sides. Remove from grill and place on a platter, sprinkle with salt and pepper. Top with tomatoes, and feta. Mix balsamic vinegar and oil using a whisk. Drizzle over salad.
My cousin made this for lunch with quesadillas and it was a great salad.
