1 acorn or butter nut squash cut in half, seeds taken out
1 lbs Sweet italian sausage,casing removed
1 medium onion chopped
2 cloves garlic chopped
1 tsp salt
1 tsp black pepper
1 tsp italian seasoning
2 tbsp olive oil
2 tbsp bread crumbs
2 bsp grated parmesan
1/4 cup shredded cheese, any kind.
Place cut squash on a baking sheet that is drizzeld with olive oil, bake skin side up on 350 degrees for about 40 minutes or until a knofe inserted comes out easily. Let cool. Scrape out the squash and set aside in a large bowl. Saute onions and garlic in olive oil unitl tender, add sausage meat, salt, pepper and Italian seasoning. Cook until sausage is browned and cooked through. Add to bowl of squash and add bread crumbs abnd grated cheese, mix well. Stuff mixture back into both shells, top with shredded cheese abd bake on 350 20-25 minutes.
Acorn squash is on sale and believe it or not, I have never eaten it.
Now, I have 2 recipes that are the menu for this week that use sausage - this one and the Italian sausage soup recipe (posted recently in Recipes: any good recipes with sausage as main ingredient).
I have never used it in a recipe, but I love all the winter squashes.
Our favorite thing to do with acorn is to pierce it, and microwave about 3-4 minutes, until not fully cooked, but soft enough to easily cut in half. Scoop out the seeds and place on a baking sheet. Add butter, a bit of brown sugar, and a few raisins, bake until done.

I do the above, and also add a scoop of unsweetened applesauce. Alternatively, try a few spoonful of apple butter.
Another "stuffing" is Stovetop. Just prepare according to package directions, then spoon into squash.
I sometimes make the stuffing mix on the side, in a pan on the stove, & just spoon it into the cooked squash. A grain stuffing like quinoa or barley is nice too.
I cut the squash in half, remove seeds, pierce it, and cook it right in the microwave cut side down. Takes about 8 minutes or so. Flip it over, add butter, maple syrup. I also microwave a few chicken breakfast sausages, cut them into coins, and put them in the squash. An easy meal, and delicious!
