Well yeah that probably would be bland. No spice, no lemon, no vinagery taste.....needs kick.
Red pepper flakes.
Middle Eastern seasonings.
Olive oil, garlic, basil (or pesto sauce.)
Salt, pepper, tomatoes, black olives, anchovies, sardines, tomatoes. (not all at once LOL.)
Nuts (pine nuts, walnuts, toasted almonds, sesame).
Vinaigrette/salad dressing, just enough for a kick of taste.

I assume you're going vegetarian so some crusty falafel works well. I would put some grilled lamb in there myself.

I love both feta cheese and hummus. I would probably add some lettuce and tomatoes with maybe a sprinkle of black pepper.

Tahini. But add it at the last minute, just before eating, or it'll turn the feta sour (tahini has lemon juice in it - lemon + cheese = sour).

Also yeah - you need to bulk it up. Chunks of ripe tomato, a little raw red onion, a couple diced calamata olives, and crisp romaine lettuce. Sprinkle with dried oregano or add a tiny pinched of *fresh* minced basil.

Toum! Its a garlicky sauce. I keep a tupperware full of it and find it goes with a lot of things.

A ton of veggies, and use a more seasoned variety of hummus vs. classic/plain. A garlic or roasted red pepper hummus adds some interest.

I love hummus with fresh herbs, sliced tomato and red onion in a pita. Sprinkle some sea salt and fresh cracked pepper in it too.
