Does anyone have a good recipe for Irish soda bread with raisins? I have tasted it wherein it tasted too bready, and too much of baking soda. Thank you in advance.

I found a good Irish Bread recipe simply because I limit my salt now adays due to high blood pressure. Turned out pretty good and it was quick and easy. Quick and easy is always good in Florida even if I do have air conditioning.

I grewup with quick and easy being from Florida so it kind of what I'm use to and most recipes turn out just as good as if I had spend long periods of time in the kitchen. Now adays I use cans or frozen vegies over fresh but I use to use fresh period frozen is the next best thing to fresh. Frozen is better then fresh in most cases but we have alot of vegitable stands and we love the all you can pick feilds or left overs they sometimes will let you pick pretty cheap. Can't find this as often as you use to be able to find it tho.

Default Moms' Irish soda bread

My mom has been making this over 25 years and since St. Patricks day is coming up I thought I would share it. Great with butter on top.Makes a great french toast too.

4 cups all purpose flour
3 tbsp sugar
1 tbsp baking powder
1 tsp salt
3/4 tsp baking soda
6 Tbsp butter
1 1/2 cups dark seedless raisins-she uses sunmaid brand
2 eggs
1 1/2 cups buttermilk

Pre-heat oven to 350 degrees. Grease well a 2 Qt aluminum cake pan or you can use a glass bowl that oven safe. In a large bowl with a fork mix first 5 ingredients. then using a fork cut in butter until mixture resembles coarse crumbs, stir in raisins.

In a small bowl whisk eggs slighlty. remove 1 tbsp of egg and reserve. Stir butter milk into remaining egg, add to flour mixture and stir just until flour is moistened. (dough will be sticky)

Turn dough out onto a well floured surface with floured hand s and knead dough about 10 strokes to mix thoroughly. Shape dough into a ball, place in greased pan. With a sharp knife cut a 4" cross about 1/4 inch deep. Brush dough with reserved egg

Bake dough 1 hour and 20 minutes or until tooth pick inserted comes out clean. Cool in pan on wire rack for 10 minutes. Makes 1 loaf. To make your own buttermilk use 1 tabelspoon white vinegar per 1 cup whole milk-mix and let set to curdle.
