Just about the only thing I use it for is making blue cheese dressing. It's one of the mysteries of the universe. My blue cheese dressing sets up perfectly in the blender, yet I can't get mayonaise to emulsify in the same blender with pretty much the same ingredieints.
I hate my blender.....it is the most worthless appliance in the kitchen. It takes continued poking and trying to move the food so they get caught by the blades.....the pulse doesn't help. Worthless! I hate it.
Mine is excellent. I bought a Vitamix two years ago and use it almost every day.
It was well worth the $400 price.
One of my friends takes his Vitamix when we go camping. Several times every year I go camping with a large group of friends. We set up a dozen or more tents and rough it except for the Vitamix, our only plug-in necessity.
I use mine for making aioli, pureeing soups, rough chop an onion/garlic/peppers, smoothies. I also use it to make ground meat more fine or fillings for croquettes. I make sauces as well. I have a mid range priced one that comes with two glass containers. (One for savory and other for sweet) I do want a vita mix or the like hopefully for the holidays this year.
I know people prefer a food processor but my blender does both well so one less appliance on the counter.
I hate cleaning a blender or food processor, especially now that I don't have a dishwasher! Plus I have limited counter and cabinet space. So, I use a small immersion blender for everything. Most of the time it gets the job done fine!

I bought a NutriBullet on ebay. I have used it once in five months.
