Okay, I have a huge amount of left over ham from Easter and I can't eat sandwiches forever, so I'm looking for something to make with it.

I've collected a few recipes for ham and bean soup, but I'm open to suggestions. What do you guys do with your leftover ham? Have any good recipes for me?

Egg noodle casserole - toss cubes of ham with white sauce and peas, pour into a glass casserole dish, sprinkle with shredded cheese, and bake until bubbly.

If you like and know how to make chicken a la king, you can do the same with ham.

You can make split pea soup and toss cubes of ham into that as well - tasty.

Grind the ham and use it for Spaghetti Carbonara. In my pursuit of a recipe for this, I found a link to a page called "Play it again, Ham" with other ideas for you - hope something strikes your fancy:

Make Au gratin potatoes and add chunked up ham to it, so yummy!

Use it for breakfast: Fried with some maple syrup, add with some eggs or diced in an omelet YUM!

Make a casserole using the following:

2 bags frozen hashbrown (thawed)
1 onion, salt, pepper
2 tbs butter
1 can Cream of celery soup
some chopped ham
Add some shredded cheese
Mix and top with cheese to bake at 350 til bubbly

This was posted by another user, I tried to do it by memory in my last post but found it-- try adding ham--

For those who don't have it. Everyone needs it.

2# frozen hashbrown potatoes, thawed
salt & pepper
2T. minced onion
1 can cream of chicken soup
1 pint sour cream
2 cups grated chedder cheese
1/2 cup butter or margerine, melted

Mix the soup, sour cream and melted butter. Stir in remaining ingredients and place in a 9x13" pan. Bake 350 until bubbly (40 mins or so)

chop it up in little cubes, saute and onion or 2 in EVOO, and add the ham and some peas. then eat over white rice...yumm--my mom used to make it oftem when we were little.

Chicken cordon blu--- GENTLY pound out chicken breast. lay 1 slice swiss cheese, and ham on half and fold over. secure with toothpick. drege with seasoned flour. Add oil to pan . Brown in pan for approx 10 min, (Both sides)
add 1/4 cup white wine. cover and simmer 10 min. In a bowl mix 1/3 cup half & half and 1/2 cup wine with a few granuels of chicken bullion, 2 tspns of corn starch. Remove chicken from pan and keep warm in oven. Add liquid from bowl to pan and stir till thickened. pour over chicken ,Serve with rice pilaf or wild rice

My husband and I adore ham and peanut fried rice.


Take some fresh ginger and garlic and heat them up for a minute in some hot peanut or canola oil. Add the cubed ham and peanuts and stir-fry till nice and toasted looking. Remove ham and peanuts to a plate.

Add a little more oil (and ginger and garlic if you wish), and stir-fry chopped veggies of choice - whatever is in fridge. Sugar snap peas, carrots, celery, and mushrooms is especially good.

Now take (preferably) cold cooked rice and stir fry it in a little oil and add the meat and veggie mixtures in. Stir until warmed through. It's also traditional to use some scrambled egg, but really I can't taste the difference.

You can offer toasted sesame oil and soy sauce at the table so people can dress up their own portions, but I just add those in while it's still in my wok as we both like it the same way. I like to make a bunch of this because it actually reheats really well for lunch the next day, and also because we eat it greedily.

slice some and put into small individual bags and freeze. then when you want to make just one meal..for instance the au gratin potatoes with some ham, you will have it. By today, you are probably hammed out!
