Brown chicken in a skillet (I used either boneless breasts or thighs), dump in a jar of salsa, bring to a simmer and top with a bag of broccoli slaw. Cover and cook for 15 minutes or until chicken is cooked through.
Fried rice with veggies and egg. If I have meat cooked already I'll add that (chicken or pork).
I freeze cooked rice in one cup amounts and use as needed. I cook it up with the veggies on hand and add soy sauce, ginger, and so on. It's cheap too! Mostly I like using up the broccoli, carrots, mushrooms and so on I have in the house. (I guess you could use frozen mixed veggies but I always think they are too blah and not a good texture).
I love breakfast for dinner so often will have omelets or pancakes.
Really, taking homecooked food out of the freezer is the quickest best. Last night I reheated frozen homemade lasagna and prepped a green salad. It was muy tasty and done in 15 minutes. Overall I try to double batch and freeze half. This weekend it was a big pot of bean soup, used two lbs of dry beans, 16 cups of liquid, and so on. Now I have a go to lunch when needed.
Aglio E Olio, adding whatever leftovers or veggies are available. Fake a garlic bread even from loaf bread, by a smearing of butter, minced garlic and broiling or baking. Salad stuff ifen you have it. A glass or two of wine and you are doing gourmet! Dessert can be a kiss...
A couple egg yolks whisked with some lemon juice and zest, pepper flakes, S&P and olive oil. Cooked pasta mixed in and then a bunch of arugula that wilts with the heat. Parmesan on top.
My current favorite quick meal is okonomiyaki (Japanese pancake). We always have the ingredients on hand and it works for my low-carb diet. All you need is eggs, flour (I cut that way back), cabbage, onions, and whatever other veggies are on hand - zucchini, bell peppers, broccoli... Options can include meat or fish.
That kind of sounds like egg foo young..no?
