The tongue wasn't skinned so I removed the skin after it cooked. My DH said it was the best he ever ate, tender and fall apart. The package actually had 2 tongues and I made both. He'll have leftovers.
I just do not understand why anyone here in the USA ( yea I get how 3rd world countries are left with the lesser cuts of the cow )
How can the tongue of the cow be as pleasurable and palatable ( is that even a word ) as the premium beef cuts that are similarly priced ?
Maybe I am missing out on the meal of a lifetime not eating a cows tongue. Would I try it if absolutely no other option to survive is available ? Yes I would of course
Would I try it when every other cut of the beef is available to me ? Absolutely not
Not trying to bash anyone who likes a certain meal ... if you are happy, I am happy for you

i too have tried tongue and I find the flavor too intense, or something, it isn't for me. But I want to like it (it sounds amazing, I usually LOVE dense texture and meaty flavors). In fact, I LOVE chicken livers, I truly enjoy the flavor (can't stand pork, or beef liver).
Its not about "inferior cuts of meet" its about what is DELICIOUS. I could afford lobster, but I enjoy chicken livers as well.
Cows tongue seems pretty tame to me, vs kidneys or " Rocky Mountain Oysters"....

I have to say some of the best tacos I've ever had were Tacos de Lengua(tongue). Very simply done with just diced tomatoes and a squeeze of lemon juice, TONS of flavor, tender, and altogether very satisfying.

I had the opportunity to try tacos de lengua in a little taqueria in Guadalajara. They were amazing but I don't think I would want to try to cook it on my own. My husband's cousin made a tongue roast for us once - it was just OK.

It is all relative actually....
I recall eating fried chicken livers and chicken gizzards with my pops as a young teen a long long time ago. As a growing kid, there were not too many things I wouldn't eat if stuck infront of my face. My dad was a country boy from TN and livers and gizzards were something he ate alot of growing up in the WW2 era.
I have not eaten a chicken liver or gizzard in close to 40+ yrs and doubt I ever eat another. Why ? Not because I wouldn't like it ... more so because I would much rather grill up a NY steak in lieu of having fried gizzards or fried chicken livers ( plus the steak is alot more healthier I would think )

I have seen the Lengua tacos on the menu at my local mex taco truck that I frequent once every couple weeks. I have thought about trying them ... but I just can't get over the hump to take the leap.
Why ? Because the tacos Asada ( beef tacos ) are so darned good ! I stick with a known good thing. I guess I just do not have any 'foodie' DNA in me.
