When this mess started, I bought two large bags of (supposedly) baby white corn. National brand. Not my regular brand from trader Joe's.
It's awful. Tough and not sweet at all.
Before I throw this junk away, any suggestions?
A tablespoon of olive oil and a couple pats of butter in a skillet on medium low.
Thaw and drain the frozen corn overnight.
Spread the corn in a single layer and fry it until golden brown.
Add in some shallots or red peppers or scallions.
Take your crappy corn to your nearest lake, pond, river or stream, and convert it into fresh fish.

Those are actually GREAT ideas! Except all the parks, lakes and rivers are off limits per our Covid-19 regulations. And I rather doubt that the groundskeepers at the Country Club would appreciate it if I shared it with the fish and birds on the course.
But it's probably worth keeping it in the freezer to enjoy when they re-open. Bring a picnic. :thumbsup:
