Came here to say exactly this. If you've ever stayed in one of those forgettable motels that provide free breakfast, and you've made yourself one of those waffles in their self-serve dining area, you'll probably be wondering why they came out so much better than the ones you make at home.

I looked into this over a decade ago, because I simply had to know what the secret was. It is malted milk powder in the waffle batter. It's what takes them from so-so to so INCREDIBLE.
