What does it mean when you have a thing for a girl that talks to you, then she finds out from someone else that you have a thing for her and she stops talking to you?

Can mean anything: she's immature, she has issues, etc.

Why would someone react negatively to someone they are attracted to?

It means that she's not into you and she doesn't want to lead you on or give you the wrong idea.

If a girl goes out of her way to talk to a boy, that's not playing hard to get IMO.

She's not playing "hard to get" - she is trying to discourage you from liking her as anything more than just a friend.
