There are men who have Anorexia and Bulemia fetishes.
Aside from that most men are hesitant to date any woman with a mental illness but they tend to make exceptions for Anas because Anas are thin and tiny and men like that for sex but they won't want anything long term.
Most Anas don't come out and speak about their illness because of the judgement so if you don't say anything they won't know. Anas are very adept at hiding their illness so this shouldn't be a problem at all unless you are completely open about it.

Does this girl look emaciated or normal? Does she talk about it ad nauseum or refrain from commenting unless pressed? Everyone has f'd up stuff in their lives.

What if she is 5'6 / 94 lbs and doesn't speak about it at all?
I would date 5'6 and 94lb. I would keep her disease in mind however and try to support her recovery in every way I could. If she relapses, however, it could go in one of many different ways. No one is perfect. My highschool sweetheart became bulimic while we were dating. She never really became skin and bones, but she lost some weight and was on her way to become malnourished. Her parents had money so she got doctors, nutritionists and all that. She ended up leaving me a few years later and we talked on and off but haven't for years at this point. From what I know through common friends, she's healthy now and has no boyfriend (I was curious, lol).
Depending on the build of the girl, that could either look skeletal or simply thin. If she looks like a bag of bones, that's definitely a turnoff; if she just looks really thin, probably wouldn't care. I'm not the type of guy who assumes every thin girl has some sort of eating disorder...one of my ex-girlfriends never weighed more than 90 pounds and she ate as much as I did.
I'd date a woman like this, but like someone already said, a relapse could cause me to act in any number of ways. I'd be conscious about not saying anything about weight or "you should eat more" or whatever, but I'd be supportive.

She may not speak of it ad nauseum but she is most certainly thinking about it. Anorexia is a serious struggle every minute of their lives.

The point here isn't whether someone like that would look sexually attractive to you, but whether her having a very serious, and in fact life-threatening, disorder (from which she'd be struggling to recover, thus needing support, communication and empathy and not merely male attention) would be a dealbreaker.
