Butter freezes solid. I always buy it in bulk and then freeze it...lasts forever in there.
Anyhow, put it in overnight, then take it out about 20 minutes before you are ready to use it.
Here's a nifty tip. Use a cheese grater if you don't have a pastry blender. Grate the very cold butter into the flour mixture, give it a stir and then use two butter knives to work it in a little more.

OK. I guess I'll put a stick of butter in the freezer tomorrow night. Then get some chocolate chips and dried cherries Saturday and see if my hands still have that magic touch.
