Like a lot of things, one gets used to not having it.
I don't try to be a vegetarian, I just rarely seem to have had the enthusiasm or energy to cook, during this first year of empty nesterhood. 🐣
It's hard to cook for one person.
Usually you just do what my grandmother called "knick-knacking," or snacking on whatever is around. She considered crackers and grapes "dinner."

Grandmas! Gotta love 'em. I can't wait to go around calling things whatever I want! My gandma would say:"hand me my foot-feets." She was talking about her slipper socks.

It's hard for me to fix dinner for just me. I stick to the 3-ingredient-method, which includes such things as:
Popcorn, butter and salt
Bread, peanut butter and jelly
Tortillas shells, cheese and salsa

My go-to meal when it's just me is to bake a seasoned chicken breast, cut it up on a plate, put salad on top and then this vinaigrette dressing (my other grandmother's recipe). Yeah, I still have to wash a baking dish, but it's not too bad.
