I just turned 60 myself, so I include myself in that group.

How do you feel when someone addresses you as "young lady" or "young man"? To me it is mildly offensive, like calling a fat person "Tiny".

Like, you know, and I know, that you are old, but I will pretend you are young and you will pretend to be flattered. Just icky.

I probable would not care. In fact depending on the persons body language I might think it is a complement.

Life is too short to take offense where it is likely none is offered or intended. And if offense was meant and I let them know I am offended, then they have achieved their purpose. Better to respond as though it is meant in a kind or friendly way. If it was just an awkward attempt at humor or meant kindly, then all is well. If it was meant to be offensive, they don't get the satisfaction of seeing that it hit its mark.

It does sound weird when I hear it. I'm in my 50s, so I do get that occasionally.

I don't mind getting called ma'am, but some people have a cow. I was in the military and anyone higher ranking even if they were a 22 year old lieutenant was called ma'am.
