Been there, done that.

Not bad if you don't mind risking your life to wander that part of town.

But nothing you can't get elsewhere.

Casa Rio on the Riverwalk is popular and good.

Los Barrios is considered by many the best Mexican food--4223 Blanco Rd.

Mi Tierra (sp?)--near Riverwalk--famous, open 24 hrs.--very good Mexican

Schilo's Deli--excellent breakfast or anytime. On Commerce by river entrance

I disagree about the restaurants on the Riverwalk being tourist traps. Because of competition, all are high quality and reasonably priced. The chains are fine--Hard Rock Cafe, The Rain Forest Cafe (delightful), Pat O'Brien's

First, I wouldn't agree that any of the chains you mentioned are "high-quality". I would agree that they're "fine", meaning the food is edible.

But the OP asked for "restaurants we shouldn't miss", and I don't know why anyone coming to SA would want to eat at the same chain restaurant they can (in all likelihood) find back home.
