I think I've already determined that there is no free-standing butcher shop in Santa Fe. I've heard of a place in ABQ called Keller's, but I want to find the best meats locally for more routine shopping.

I wouldn't mind sampling the various alternatives but was looking for some meat lovers who have a favorite to share.

The basic requirement would be beef, but ideally, they would be able to source some somewhat more unusual items, like wild boar sausage (I did find ground wild boar, unfrozen, in the Sprouts at de Vargas.

Thanks!

Poncho, thanks for the link. The one comment on Kaune's goes to my reason for asking here...

In general, yes, I know you can purchase meat at the farmers market, Kaune's, Whole Foods, Sprouts, Albertsons, Smith's, Lowe's, and so forth.

I'm really looking to hear from someone who is a meat person and can comment with some detail on which ones they like and why.

Personally, I favor grass feed beef (certified organic can still be raised in a factory on corn), but the more important distinction to me is the quality of the meat. There's meat; good meat; great meat and sublime meat!

I'm going to taste test myself, but hope that some serious meat-eaters post here.

People say Kaune's has the best meat in town. That's all I know. But I don't thing they're into grass-fed, organic, and all those specialized things. You could call them and ask.

Ruth,
I'll definitely will try Kaune's. Knowing that "people say Kaune's has...." is the kind of endorsement I was looking for. The grass fed is a whole separate issue and I'll ask them next time I'm in. Thanks!

Yeah, some people, meat-o-philes, I guess (lol) go to Kaune's just for the meat. Then they get hooked on some of the other specialty stuff they carry.

"Ask, and they will open a butcher shop for you." Santa Fe is so Magic!
Read in Bienvenitos today that a butcher shop will be opening this summer at Solana mall.
Going to Kaune's today for a celebratory steak (3 months in Sfe), but after reading Omnivore's Dilemma, I'm sold on the vastly superior health benefits of grass fed beef over any other kind.

That's interesting. Did it say what space the shop would be opening in? I wonder how that'll affect the butcher section in the grocery co-op there.
